Beef and Veggie Skillet Bake

Ingredients:

Preheat your oven to 375 degrees Fahrenheit. In a large skillet, heat 2 tbsp of olive oil over medium-high heat. Add in the beef cubes and cook until browned on all sides, about 5-7 minutes.

Once the beef is browned, add in the diced onion and cook until softened, about 3-4 minutes. Then, add in the mixed vegetables and stir until they are evenly distributed throughout the skillet.

Next, add in the can of tomato paste and stir until all of the ingredients are coated. Cook for an additional 2-3 minutes to allow the flavors to combine.

Transfer the skillet to the preheated oven and bake for 20 minutes. After 20 minutes, sprinkle the shredded mozzarella cheese over the top of the skillet and return it to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
