Beef, Bean, and Okra Stew
Ingredients:
- 1 pound beef, cut into small cubes
- 1 can of black beans
- 1 cup of okra, sliced
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 can of diced tomatoes
- 1 cup of beef broth
- 1 tablespoon of olive oil
- 1 teaspoon of chili powder
- 1 teaspoon of cumin
- Salt and pepper to taste
Instructions:
1. In a large pot, heat the olive oil over medium-high heat. Add the beef cubes and cook until browned on all sides, about 5-7 minutes. Remove the beef from the pot and set aside.
2. In the same pot, add the diced onion and minced garlic. Cook for 2-3 minutes until softened.
3. Add the sliced okra to the pot and cook for 5 minutes, stirring occasionally.
4. Pour in the can of diced tomatoes and beef broth. Stir in the chili powder and cumin.
5. Add the browned beef cubes back into the pot. Season with salt and pepper to taste.
6. Bring the stew to a boil, then reduce the heat to low. Cover and let it simmer for 30 minutes, stirring occasionally.
7. Drain and rinse the black beans. Add them to the pot and let the stew simmer for an additional 10 minutes.
8. Taste and adjust seasoning if needed. Serve hot and enjoy your Beef, Bean, and Okra Stew!
