Beef Stew with Tomato Paste
Ingredients:
- 1 lb beef cubes
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 potatoes, diced
- 1 can (6 oz) tomato paste
- 2 cups beef broth
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
Instructions:
1. In a large pot or Dutch oven, heat olive oil over medium-high heat.
2. Add beef cubes and cook until browned on all sides, about 5 minutes.
3. Remove beef from pot and set aside. Leave any remaining oil in the pot.
4. Add diced onion and minced garlic to the pot. Cook until onions are translucent, about 3-4 minutes.
5. Add diced carrots and potatoes to the pot and cook for another 5 minutes.
6. Stir in tomato paste and cook for 1-2 minutes.
7. Add beef broth, dried thyme, and dried rosemary to the pot. Stir to combine.
8. Season with salt and pepper to taste.
9. Return beef cubes to the pot and bring the stew to a boil.
10. Reduce heat to low and let the stew simmer for 1-2 hours, or until the beef is tender and the vegetables are cooked through.
