Lemon Garlic Chicken with Roasted Vegetables
Ingredients:
- 4 chicken breasts
- 4 cloves of garlic, minced
- 1 lemon, juiced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper, to taste
- 4 cups of your choice of vegetables (such as bell peppers, zucchini, and carrots)
- 1 tablespoon balsamic vinegar
Instructions:
1. Preheat your oven to 375°F (190°C).
2. In a small bowl, mix together the minced garlic, lemon juice, olive oil, oregano, thyme, salt, and pepper.
3. Place the chicken breasts in a baking dish and pour the marinade over them, making sure the chicken is evenly coated.
4. Let the chicken marinate for at least 30 minutes, or up to 2 hours in the refrigerator.
5. While the chicken is marinating, prepare your vegetables by cutting them into bite-sized pieces.
6. In a separate baking dish, toss the vegetables with balsamic vinegar and a sprinkle of salt and pepper.
7. Place both baking dishes in the oven and bake for 25-30 minutes, or until the chicken is fully cooked and the vegetables are tender.
8. Serve the lemon garlic chicken with the roasted vegetables and enjoy!
Optional: For added flavor, you can also grill the chicken instead of baking it. Simply preheat your grill to medium-high heat and cook the chicken for 6-8 minutes on each side, or until fully cooked.
