Zucchini and Chicken Rice Bowl

Ingredients:

First, cook the rice according to package instructions and set aside.

In a large skillet, heat some oil over medium heat. Add the diced chicken and cook for 5-7 minutes until browned and cooked through. Remove from skillet and set aside.

In the same skillet, add a bit more oil if needed and sauté the diced onion and minced garlic until fragrant and translucent.

Add the sliced zucchini to the skillet and cook until tender, about 5 minutes.

Once the zucchini is cooked, add the cooked chicken back to the skillet and stir to combine.

Pour in the tomato sauce and stir well. Let the mixture simmer for 5-10 minutes.

Serve the zucchini and chicken mixture over the cooked rice in a bowl.
